By KC Kudra
Fresh strawberries are low in calories and they look and taste wonderful. This colorful berry can be used to make all kinds of gorgeous desserts. Strawberries might be associated with the spring and summer and this is when they are in season but you can also use frozen strawberries in some recipes. Fresh ones would be preferable if you are decorating a cake but frozen fruits are fine if you are pureeing them to make a mousse or using them in a pie.

Simply whip two cups of cold cream until it is thick without being stiff. Beat in one and a quarter cups of powdered sugar gradually. Just add a little at a time. Next fold in a pint of mashed fresh strawberries and spread the mixture into an eight inch square dish. Freeze the mousse until firm and then serve it after any entree or as an indulgent snack.
An Impressive Looking Dessert for a Buffet
This recipe is great if you are entertaining people because the strawberries are cut to look like flower petals. They are then filled with a creamy mixture. You can either use semisweet chocolate or milk chocolate in this recipe.
These stuffed berries make great finger food and the kids will love them as much as the adults do. Use really big strawberries if you can find them, because they are easier to fill and they look more striking.
What you will need:
* 32 big fresh strawberries
* 2 tablespoons grated semisweet chocolate
* 1/2 cup powdered sugar
* 12 oz softened cream cheese
* 1/4 teaspoon almond extract
How to make them:
Cut a thin slice off the stem end of the berries so they can stand up on the flat end. Put them cut side down on a platter and cut them into four wedges. Do not cut all the way through the berries. Fan the wedges out a bit, being careful not to break the strawberries.
Beat the cream cheese with the almond extract and powdered sugar until the mixture is fluffy, and then fold in the chocolate. Fill the berries with the cream cheese mixture, using a piping bag with a decorative tip or a teaspoon. You can sprinkle a little more grated chocolate over the finished berries if you like. Cover and chill the platter until you are ready to serve them.
